Chicken Salad Sandwich

Equipment: Instant Pot and Emergent Blender.

This Chicken Salad Sandwich is the epitome of deliciousness in a bite. 

Paired with some crispy, or toasted bread, garnished with bacon, lettuce tomatoes, my oh my is it divine!

 

Something so simple, which by the way, this is such a simple recipe made in the instant pot, can seriously be so mouthwatering good. 

Another thing that makes this so simple, is the ingredients we will be using. It's just basic ingredients you probably already have on hand, and it's so quick to put together, while​using the Instant Pot in this recipe makes this even an easier process as well. 

 

One of the key things to point out in this recipe, is not only adults will love this recipe, but children will also think it's delicious.

My littles absolutely love this sandwich, and this filling can also be used in my chicken puff recipe using my choux dough pastry.

One reason why I think they like it so much, is there is no sharp bite of onion or celery in this recipe. Everything cooks down really well so all the flavor is uniformed. 

Let's go ahead and get started making this scrumptious lunch, my chicken salad sandwich in the Instant Pot.

  • 1 to 2 pounds of chicken breast or thighs *

  • 4 cloves of garlic

  • 1/2 onion sliced

  • 1/2 tsp of poultry seasoning or 1 chicken bouillon cube (omit salt if using boullion)

  • 1/2 cup of water or chicken stock

  • 1/2 tsp of salt

  • 1/4 tsp of black pepper

  • 1 tablespoon mustard

  • 3 tablespoons mayoneise

  • 1/4 cup liquid rendered out from cooked chicken 

  • 1/4 cup of chopped cilantro 

1. Place chicken into instant pot insert.

2. Season with salt, pepper, poultry seasoning,

3. Add in sliced onion and whole cloves of garlic.

4. Add in water or chicken stock.

5. Set Instant Pot to seal and Pressure Cook for 30 minutes. 

6. Let pressure naturally release after cooking is completed. Simple either leave it alone to release, or you can manually release it by changing the vent from sealing to vent. Be careful because there will be hot steam quickly escaping if you choose to manually release.  

7. Carefully, in a heat safe bowl, drain half of the liquid, leaving about 1/4 cup amount with the chicken. 

8.Add in your mustard, mayonnaise, chopped cilantro.

9. Using your emergent blender carefully blend until the chicken is nice and smooth and all the ingredients are thoroughly incorporated, including the cloves of garlic and onion slices. 

10. Serve on some delicious bread with toppings such as lettuce, tomatoes, bacon, jalapenos or hot sauce.
