Easy Sourdough
Discard Pancakes
Easy 5-minute pancakes.
Slightly sweet.
Lightly tangy.
Spiced to perfection.
Hints of vanilla.
Easy to digest.
SIMPLICITY
My favorite part of this recipe is the simplicity of them. You need just a handful of ingredients and whips together in less than 5 minutes.
No need to pull out a ton of ingredients, extra dishes to wash, none of that. It simple to the point everything is mixed in one bowl and it uses sourdough discard!

DISCARD
I love having sourdough discard on hand and particularly for this recipe. If there is one recipe, I must use discard for it will be this one!
Now there are many great recipes, including my fluffy sourdough discard pancakes that I love and use my discard in, however these are definitely on the top three list of favorites!

If you don't have discard, you can use active sourdough starter for this, or you can feed your sourdough starter the night before and in the morning use that discard for these pancakes. You will need at least 1 cup of discard.
1. In a large bowl add in your sourdough discard.

2. To discard add in brown sugar, egg, vanilla and almond extract, cinnamon, nutmeg and coconut oil.

3. Add baking soda lastly.
​
3. Stir well until everything is well combined and incorporated.
Do not overmix.

4. On medium heat or pre heat griddle to 350 degrees F pour in about 1/4 cup of batter and cook until bubbles form (roughly 45 seconds to one minute).

5. Flip pancake and cook for an additional 45 seconds to 1 minute.
​
6. Place a 1/2 teaspoon amount of butter one top of each pancake.
​
7. Serve with maple or pancake syrup and extra butter on the side if needed.
