DOUBLE CHOCOLATE CHIP COOKIES

Chocolate. Oh, sweet chocolate. How you brighten my day with one single bite. Chocolate, oh sweet chocolate. 

When I think of the uses of chocolate, I can think of a plethora of ways. Cakes, drinks, bars, fillings, frostings, cookies - lets focus on that one here. Cookies, chocolate chip cookies.

Is there any better quick snack than chocolate chip cookies? I love me some good, melt in your mouth, ooey gooey chocolate chewy cookies.

Chocolate chip cookies take about ten minutes to put together, and a short baking time and you have this incredible bite of goodness. The longest part is just chilling.

When making chocolate chip cookies, a great way is to make the dough the night before hand or early in the morning and just set in the fridge, so by the time you are ready you just bake. I always like to let the dough sit out at room temperature for about five or ten minutes so it's easier to work with. 

Now these are no ordinary chocolate chip cookies. These are double chocolate chip cookies. I mean, can we just. DOUBLE CHOCOLATE? Twice the amount of chocolate?

I cannot. Okay, well I can, and I do too many times for my own good. I make this recipe almost every week sometimes twice a week. 

This is an incredible easy recipe to pull together, the ingredients are basic, the process is simple, and the time is short to put it together.

INGREDIENTS

 

1. Melt 1 stick or 1/2 cup of butter. It can be unsalted or salted.

2. Add in brown sugar and stir.

3. Stir for about a minute until a smooth, thick consistency.

4. Add in vanilla and mix.

5. Add 1 large egg, mix well until combined.

 

6. Sift in Baking Soda, Flour and Dutch processed cocoa powder. You can use regular cocoa powder.

7. With a spatula, gently mix all ingredients until 3/4 ways fully mixed in.

8. Add in chocolate chips and finish combining all ingredients.

9. Cover with cling wrap and chill in the fridge for at least two hours. 

10. Preheat oven to 350 degrees F. 

11. Scoop into two tablespoons amount and roll into a ball.

12. Place on a lined baking tray, lined with parchment paper and bake. 

13. Bake at 350 for 10 minutes. Do not over bake.

14. Remove from oven to finish baking and gently cooling.

15. Enjoy warm or cooled.
